This Peach and Nectarine Greek Salad is so refreshingly delicious and very simple to whip up. You’ll be noshing on this all summer!

We all know that sweet and salty is an amazing combo but I’d rather eat a trough of vegetables than a bowl of peaches, no exaggeration either. But at one point these stone fruit salads were trending and like most people I eat with my eyes first. We can’t deny these salads are stunning, so I put my big girl pants on and tried it. I was hyping myself up in my head lol. I figured, can’t go wrong with my fave combo- tomatoes, cucumbers, red onion, feta and an herby vinaigrette. Basically a greek salad without the olives.

I had no idea what to expect, but OMG! that first bite, changed my life! lol It was so good that my daughter literally took the plate out of my hand and finished the entire thing. Of course I had to make another one.. We had that salad twice in one day!!

The vinaigrette is pretty simple. Fresh oregano, parsley, lemon juice, white distilled vinegar and some honey, to help emulsify the dressing and balance things out a bit. When making this dressing, always pickle the onions first with the lemon juice and vinegar. When you’re done getting the salad together, just throw the pickled onions on top and use that same vinegar to make the vinaigrette.

If you’re like me and prefer savory foods, give this Peach and Nectarine Greek Salad a try.. its perfect. sweet but not too sweet, salty, tangy and spicy because of the crushed red pepper. This was legit a game changer for me 🙂

Peach and Nectarine Greek Salad

Yield: serves 2-3 ppl

This Peach and Nectarine Greek Salad is so refreshingly delicious and very simple to whip up. You'll be noshing on this all summer!

Ingredients

  • 2 Peaches
  • 2 nectarines
  • handful of cherry or grape tomatoes
  • seedless cucumber
  • small red onion
  • feta cheese
  • fresh oregano leaves from 3-4 stems or 1tsp dried
  • fresh parsely leaves from 4-5 stems
  • juice of half a large lemon or one small one
  • 1 tbsp white vinegar
  • 2 tsp honey
  • 1/3 cup extra virgin olive oil
  • 1/8-1/4 tsp crushed red pepper, optional
  • salt and pepper to taste

Instructions

    1. Peel and slice the red onion into strips and place in a small bowl, season with a dash of salt, add the lemon juice and vinegar. Let it sit and pickle while you prepare the rest of the ingredients.
    2. slice the tomatoes in half, transfer them to your medium sized bowl, then slice the cucumbers into thin rounds, transfer to bowl with tomatoes
    3. slice peaches and nectarines in half along the pit, rotate the halves in opposite directions and pull the halves apart*, remove the pit with a spoon and slice into thin wedges, transfer to the bowl with the tomatoes and cucumbers and season it all with a dash of salt and pepper
    4. Transfer the pickled onions to the bowl with the rest of the salad, leave the vinegar in the small bowl.
    5. Add the honey and extra virgin olive oil to the small bowl with the vinegar, whisk until the dressing comes together. it should be slightly thickened and completely emulsified
    6. Roughly chop the oregano and parsley, stir it into the dressing, season to taste with salt and pepper.
    7. Add some dressing to your salad, a little or alot, that's completely up to you.
    8. Add the crushed red pepper if using, and crumble some feta cheese on top.
    9. Enjoy!

Notes

*if for some reason the stonefruit is not pulling apart then just slice it along the pit like you would a mango and then proceed to cut those pieces into slices.
