This Easy Snickerdoodle Fruit Crumble makes good use of your not so snackable fruit and with pre-made cookie dough as the crumble, dessert will be ready in no time at all!!
I made this crumble with fruit that had to be used up ASAP. But this recipe is just as good with frozen berries. Keeping frozen berries in my freezer is a huge pantry hack for me. This way I can make mouth watering easy fruit desserts any time of the year. No need to wait for them to be in season 🙂
Mise En Place for Easy Snickerdoodle Fruit Crumble:
Equipment:
- 9 inch pie pan
- Sheet pan
- Mixing bowl
- Measuring cups and spoons
Ingredients:
- Snickerdoodle cookie dough – homemade or store bought sugar cookie dough rolled in cinnamon sugar (1/4 cup sugar, 1-2 tbsp ground cinnamon)
- Fresh or frozen combo of berries
- Cornstarch
- Lemon
- Cinnamon
- Sugar
- Vanilla extract
- Kosher Salt
Let’s make this Easy Snickerdoodle Fruit Crumble!
Prep:
Preheat your oven to 375* F. Measure the berries, cornstarch, lemon, cinnamon and 1⁄4 cup of sugar into the mixing bowl. Mix thoroughly and taste the fruit. If the fruit is too tart then add the remaining sugar. Let the berries sit for at least 5 minutes.
Cook:
Pour the berries to the pie plate and take pinches of snickerdoodle dough and dot the top of the berries. Transfer the pie plate to the sheet pan and bake the crumble for 45-50 minutes. The berries should be bubbling and the cookies browned.
Eat:
Serve with whipped cream or Ice Cream. I highly suggest taking the ice cream route.. Cherry vanilla or Chocolate. yum ! Enjoy!

Easy Snickerdoodle Fruit Crumble
Snickerdoodle cookies are the perfect crumble topping for the warm cinnamon scented berries underneath.
Ingredients
- Snickerdoodle cookie dough*
- 2 lbs of fresh or frozen berries
- 1 tsp vanilla extract
- 1-2 tsp cinnamon
- 1/4 - 1/2 Cup sugar
- Juice of half lemon
- 2 tsp cornstarch
- Dash of Kosher Salt
- Whipped cream or ice cream, to serve.. optional
Instructions
- Preheat your oven to 375°F
- In a bowl mix the fruit, lemon juice and sugar. start out with 1/4 cup and taste the fruit, if the fruit isn't sweet enough then add the remaining sugar. Add a nice dash of salt. stir and let it sit for 5 minutes or so.
- Add the cornstarch and mix it all together.
- Pour the fruit mix into your pie pan.
- Dot the fruit mix with the cookie dough.
- Place the pie plate on the sheet pan and transfer to the oven. Bake for about 45-50 minutes, until the berries are bubbling and the cookies have browned.
- Serve with whipped cream or ice cream.
