Ok lets talk about traditional mojo for a sec. Mojo is a garlic citrus sauce that is widely used in latin cuisine. The recipes differ a little bit but the main ingredients are citrus, namely Naranja Agria which translates to sour oranges, garlic and sometimes oil.

Sour oranges are hard to find and when I do find them, they’re dry as hell. I use oranges, limes and lemons to mimic the sour orange. Most people just use oranges and limes, which is totally fine but I like the addition of lemon juice. The lemon juice rounds out the orange and lime juice and just makes it more flavorful, in my opinion. I also omit oil, it doesn’t need it unless i’m making a vinaigrette but chances are im using this mojo recipe to cut the fat of fatty meats or as a dip for fried things like Tostones, (fried plantains).

Use this homemade mojo sauce as a base recipe, add some herbs and oil for an herbaceous garlicky vinaigrette or add to mayo for an easy flavorful aioli hack :-).   • 1 cup measuring cup
  • fork or citrus juicer
  • container with air tight lid

Let’s make Easy Homemade Mojo Sauce!

Prep:

Affix your cutting board to your work surface with a damp paper towel. Roll all the citrus with your hand on the board to make them easy to juice. Cut all citrus in half and juice with a citrus juicer or if you’re like me and don’t have one then use the fork method. First place the mini strainer over the measuring cup and insert the fork into the middle of the citrus and squeeze over the strainer to get all the juice out.

Peel the garlic and mince very finely or use the mortar and pestle to make a quick paste, add it to the citrus in measuring cup. Crush the oregano with your hands, this releases the beautiful aroma of the oregano and add it to the citrus party. add the salt and stir vigorously.. thats it! all done! Transfer to your container, label, date and store till ready to use.

no cooking , unless you’re making tostones and I highly recommend you do:-)

How do you store homemade mojo?

~ Store in an air tight container. My recipe is just acid and garlic, which means it’ll last a long time. In essence ,the citrus is pickling the garlic The longest its lasted in my house was 2 weeks. Now if you add oil or other ingredients, then store in an air tight container for 3 days if you add herbs or 1 week if you use oil.
