  • 4 qt dutch oven or soup pot
  • cutting board
  • chefs knife
  • potato masher

Ingredients:

  • Yellow onion
  • Hot or sweet Italian sausage
  • Ground Turkey
  • Garlic cloves
  • Italian Seasoning spice blend
  • Tomato paste
  • Canned crushed tomatoes
  • Water or stock
  • chicken Bouillon cube
  • Lasagna noodles
  • Baby spinach
  • Heavy Cream
  • Ricotta cheese
  • Parmesan Cheese
  • Garlic powder
  • Fresh parsley or basil (optional)

Let’s make this Comforting One-Pot Lasagna Soup!

Prep:

First things firs. Affix your cutting board to your work surface with a damp paper towel. Peel and dice your onions, mince your garlic and shred the carrots. Set it all aside. Grate the parm and Chop the parsley if using, for the ricotta cheese mix. Set That aside as well. Break the lasagna noodles into pieces and set aside. Lastly, remove the casing off the sausage.. and you guessed it, set it aside as well.

Add all the ingredients for the ricotta cheese mix to a bowl and mix. Adjust seasoning with salt and pepper. Set it aside in the fridge.

Cook:

Place your pot over medium high heat on your stove. When hot, cover the bottom of the pot with a thin layer of extra virgin olive oil, then the onion and grated carrots, season with a couple dashes of salt and pepper. Sauté until the onions are translucent and starting to turn golden brown. Throw in the sausage and mash up the sausage with the potato masher. Add in the ground turkey. Mix it all together, use the potato masher to break up the meats. Brown the meat. Add the tomato paste and Italian spice mix, season with a couple dashes of salt and pepper. Continue to cook until the meat is browned and the bottom of the pot is dry. You want the meat to stick to the bottom. All those brown bits are flavor bombs. We’re going to scrape all that flavor up when we add the liquids to the party.

Add in the crushed tomatoes, water (or stock) and the bouillon cube. Stir and scrape the bottom of the pot. Bring the soup up to a boil, then add in the noodles. Lower the flame to medium low and cover. Simmer until the noodles are done. Lastly turn off the heat and add in the spinach, fresh basil or parsley (if using), heavy cream and Parmesan Cheese.

Eat:

Ladle this delicious, lasagna soup into bowls and serve with a dollop of the ricotta mix on top and some extra Parmesan Cheese. Some crushed red peppers on the side would be nice too 🙂 Enjoy!

  • 1 Yellow onion, diced or chopped
  • 2 Italian sausage links, casings removed*
  • 4 oz Ground Turkey
  • 3 Garlic cloves minced
  • 2 Tbsp Italian Seasoning spice mix
  • 1 full Tbsp Tomato Paste
  • 1 28 oz can of Crushed Tomatoes
  • 8 cups water or stock
  • 1 Chicken Bouillon cube
  • 7-9 Lasagna noodles, broken up
  • 1.5 cups baby Spinach
  • 1/2 cup Heavy cream
  • 2 cups Ricotta cheese
  • 1 tsp Garlic Powder
  • 3/4 cup grated Parmesan Cheese, separated 1/2 cup and 1/4 cup
  • Kosher salt
  • Black Pepper
  • handful of Fresh parsley or basil - optional
  • crushed red pepper , to serve - optional
