This Lazy Blueberry Oatmeal Streusel loaf is Delicious and moist, full of blueberries and no scooping required! This recipe is also fuss free and mostly pantry ingredients so its easy on your pockets 😉

My love for blueberry muffins run deep and I always want the muffins with the oatmeal streusel topping. With out it it just looks naked. That doesn’t mean they won’t get eaten. Listen If I had to choose between naked blueberry muffins and no muffin, I’m picking the naked blueberry muffins 😉 Luckily for this loaf recipe we don’t have to choose.

Even though I’m not a baker. Well, I should say, I don’t consider myself a baker. Hence the lazy loaf lol . But I still crave sweets like this lazy blueberry oatmeal loaf. So I keep my pantry stocked with the basic baking essentials. The only thing I had to run to the store for were the blueberries. A stocked pantry saves me tons of money and time. Mise En Place (everything in its place)

Equipment:
  • 2 Bowls for mixing
  • Handheld or standing mixer
  • whisk
  • spatula
  • 9×13 loaf pan
  • parchment paper
  • oil spray
Ingredients:
  • All purpose flour. – The most versatile of all flours
  • Salt. – Yes even in baking we need salt. It brings the flavors out.
  • Baking Powder. – Helps to leaven the loaf
  • Ground cinnamon.- Cinnamon goes exceptionally well with berries
  • White sugar. – This just means granulated sugar.
  • Brown sugar. – Light or brown sugar is ok here
  • Large egg. – Eggs are also used to leaven cakes
  • Butter.- For flavor and color
  • Vanilla Extract. – If at all possible try to get the real stuff. Imitation works in a pinch though 😉
  • Milk. – Any milk works in this recipe.
  • Blueberries. -Fresh or frozen is ok
  • Oatmeal. -Instant or regular is fine.

Let’s make this Lazy Blueberry Oatmeal Streusel Loaf!

This is a pretty straight forward muffin recipe and very forgiving. First things first and preheat your oven so its ready to go when the batter is mixed. Then line your pan with parchment paper or grease liberally with butter or spray with oil and set it aside.

Now we ready to roll. Sift all the dry ingredients into a bowl and set it aside. I like sifting the dry ingredients because all the ingredients get uniformly dispersed through out. Take out about a tbsp of this to coat the berries in later. This will prevent the berries from falling to the bottom of the batter.

Now for the wet. In the other bowl add both sugars and the melted butter. The butter should be liquid and not solid. Mix till incorparated, use a with a spatula. With a hand held mixer, beat in the egg and vanilla until just mixed in. You shouldn’t see streaks of egg. Pour in the milk and stir it in until the sugar dissolves.

Fold in the wet ingredients into the dry ingredients. If its really lumpy, use the mixer to smooth it out the loaf batter.. about 10 seconds will do. Add the reserved flour mix to the blueberries and add the blueberries to the batter. Pour it all into the prepared loaf pan.

To make the oatmeal streusel simply crumble the butter into the sugar, oatmeal and salt. They should resemble wet clumps of sand when done. Add this delicious oatmeal streusel to the blueberry loaf and bake for 50-55 minutes. Its done when toothpick inserted into the middle of the loaf comes out clean.

Let it cool for 5-10 minutes before digging in.. it’ll be hard, I know 😉 Enjoy!

Can I Prep this ahead?

The only prep you can do here is to pre mix the dry ingredients ahead of time. Store them in an airtight container and when ready to bake add in the wet.

Can I just point out that this lazy blueberry oatmeal loaf is technically 1 big muffin. Anddddd that I may or may not have eaten more than half the whole thing. I won’t say anything if you do too. it’ll be our little secret 😉 lol

Lazy Blueberry Oatmeal Streusel Loaf

Yield: 1 9 inch loaf
Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour

Delicious and moist Blueberry Muffins with a cinnamon streusel topping in loaf form, no scooping required, perfect for lazy days!

Ingredients

  • 2 cups All Purpose Flour
  • 1/4 tsp kosher salt
  • 1 1/4 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 4 tbsp salted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup milk of choice
  • 1 1/4 cups blueberries, fresh or frozen. no need to thaw if frozen

Oatmeal Streusel

  • 1/4 cup instant or regular oats
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 2 tbsp cold butter
  • dash of salt

Instructions

  1. Preheat your oven to 375°F
  2. Grease or butter a 9 inch loaf pan and set aside
  3. Whisk together the flour, salt, baking powder and cinnamon in a bowl, take out about a tbsp of this dry mix to coat the blueberries in later.
  4. In another bowl add both sugars and the melted butter, use a spatula to combine. Mix in the egg and vanilla. Pour in the milk and stir until sugar dissolves.
  5. Add the wet ingedients to the dry and mix with a spatula.
  6. Add the saved dry tbsp of mix to the blueberries and fold it into the batter.
  7. Pour the batter into the loaf pan and make the streusel
  8. Combine all ingredients for the streusel in a bowl and use your fingers break up the butter into the oat mix. You want to make buttery clumps of oats.
  9. Add the streusel to the top of the loaf and bake for 50minutes or until a toothpick inserted in the middle comes out clean.
  10. Let it cool a little before slicing.
  11. Enjoy!

Notes

You're going to need 2 bowls, a handheld mixer or a strong whisking arm, a spatula, 9 inch loaf pan and some butter or oil spray to grease it.
