  • Caesar dressing – homemade or store bought

Let’s make this Easy, Delicious Chicken Caesar Salad.

Prep:

Let’s make the marinade first. Pour some caesar dressing in one of the bowls and thin it out with a little water (or milk). Add the chicken to the bowl and cover the breasts in the marinade. Set it aside as you prepare the rest of the ingredients.

The lettuce is next. Affix your cutting board to your work surface using a damp paper towel. Chop the lettuce or cut into squares or shred. Cut it the way you like to eat it. Transfer to a bowl and fill with water. Let it chill for a second, the dirt will fall to the bottom of the bowl. lift the lettuce from the water and transfer the salad spinner. Spin completely dry. It’ll take a few spins, dump the water each time. Rinse and dry the bowl the lettuce soaked in. Put the clean lettuce in the bowl and set it aside.

Next is the croutons. Preheat your oven to 350° . Cube the baguette and transfer to a bowl. Drizzle the cubed bread generously with the extra virgin olive oil and season with a couple pinches of salt and pepper. Transfer to the sheet pan and bake in the oven till golden brown and crispy , 15-20 minutes. Set them aside

It’s time to cook the chicken. Place the saute pan over medium high heat. When hot, coat the bottom of the pan with a light coating of evoo. Add the chicken breast, sauté one side until you get a nice color on it, about 8 minutes. flip and continue to cook until done, about another 8 minutes. All this depends on how thick or thin the breast is. The chicken is ready when it reaches an internal temp of 165°. Let the chicken rest for at least 5 minutes. Cut the chicken into cubes and set aside.

Eat:

It’s almost time.. 🙂 Add some caesar dressing to the bowl with the romaine, throw in a few croutons and toss until everything is dressed evenly. Transfer to a plate, top with the chicken, more croutons and shaved parm if using.
